Colorful Egg & Veggie Power Bowl

Ingredients:

๐Ÿฅฌ 1 cup chopped romaine or leafy greens

๐Ÿฅš 2 hard-boiled eggs, halved

๐Ÿฅ‘ 1/2 avocado, sliced

๐ŸŒฝ 1/4 cup sweet corn

๐Ÿ… 1/2 cup cherry tomatoes, halved

๐Ÿง… 1/4 red onion, sliced

๐Ÿง„ 1 green onion, sliced

๐ŸŒฟ Fresh cilantro leaves

๐Ÿง€ 2 tbsp crumbled feta cheese

๐Ÿง‚ Salt & black pepper to taste

๐ŸŒถ Optional: pinch of red chili flakes

๐Ÿ‹ Optional: squeeze of lemon or lime juice

Instructions:

Prepare Eggs: Boil eggs for 9โ€“10 minutes, peel, and slice in half.

Assemble Bowl: In a serving bowl, layer chopped greens, tomatoes, corn, red onion, green onion, avocado, and boiled eggs.

Top It Off: Sprinkle with feta, chopped cilantro, black pepper, and chili flakes if using.
