Cheesy Stuffed Meatloaf Bites

Ingredients:

  • 1 lb ground beef (or a mix of beef & pork)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup finely chopped onion
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp Italian seasoning (optional)
  • 1 cup shredded cheddar or mozzarella cheese (or cheese cubes)
  • Ketchup or BBQ sauce (for topping)
  1. Preheat oven to 375°F (190°C). Lightly grease a mini muffin pan or baking sheet.
  2. Mix the meat mixture:
    In a large bowl, combine ground meat, breadcrumbs, milk, egg, onion, garlic powder, salt, pepper, and Italian seasoning. Mix just until combined—don’t overmix.
  3. Form and stuff:
    Take a tablespoon of the meat mixture and flatten it in your hand. Place a cube or pinch of shredded cheese in the center, then wrap the meat around it and roll into a ball.
  1. Bake:
    Place each meatball in a mini muffin tin or on a lined baking sheet. Top each with a small dollop of ketchup or BBQ sauce.
  2. Bake for 18–22 minutes, or until cooked through and nicely browned on top.
  3. Serve warm, with extra dipping sauce if desired!
