Colorful Egg & Veggie Power Bowl

Ingredients:

🥬 1 cup chopped romaine or leafy greens

🥚 2 hard-boiled eggs, halved

🥑 1/2 avocado, sliced

🌽 1/4 cup sweet corn

🍅 1/2 cup cherry tomatoes, halved

🧅 1/4 red onion, sliced

🧄 1 green onion, sliced

🌿 Fresh cilantro leaves

🧀 2 tbsp crumbled feta cheese

🧂 Salt & black pepper to taste

🌶 Optional: pinch of red chili flakes

🍋 Optional: squeeze of lemon or lime juice

Instructions:

Prepare Eggs: Boil eggs for 9–10 minutes, peel, and slice in half.

Assemble Bowl: In a serving bowl, layer chopped greens, tomatoes, corn, red onion, green onion, avocado, and boiled eggs.

Top It Off: Sprinkle with feta, chopped cilantro, black pepper, and chili flakes if using.

Finish: Add a drizzle of olive oil or a splash of lemon/lime juice for extra zing.
